Pioneer Woman Wednesday...Recipe #21

Marlboro's Man's Favorite Sandwich


Before I get to the sandwich, I have an update on last week's recipe. I apparently DO like Marmalade Muffins!! I decided to concede to this fact since I was popping one every time I walked by!! 

I have also decided I know why this week's recipe is Marlboro Man's favorite...it's bread and meat. The end. Simple food is what the men folk like the best! It's us girls that like to fancy things up!! 


The recipe calls for butter all throughout!


Right there is one of the best things I have gotten out of doing this cookbook cook through! My Littles are asking to come in the kitchen and help me. {{{happy sigh}}}


Cutting onions calls for wearing an  I <3 Justin Bieber bracelet.


Lots of butter. Add onions.


Take out onions. Add MORE butter. Brown meat.


Simmer all together. Smells so good!!!


Add liquid to tasted bun. Pile high with meat and onions.


YUM!!


That's one proud Little!! And that makes for one *HAPPY* mama!


This was a "make again" recipe for the entire family!!

*Favorite Things Friday*

Ahh, this week's favorite thing... I put out a teaser on my Facebook status a few weeks ago about ordering a life changing product. Well, it may not be LIFE changing but it sure has been kitchen cabinet and utensil drawer changing!! Anything that makes life a little easier is just a little happy because...

Organization and Simplification are two of the most wonderful words that were ever spoken...


Look again, ain't it great!!! It's called the Joseph Joseph Nesting Set (large bowl, colander, sieve, small bowl, and 4 measuring cups (1-cup, ½-cup, 1/3-cup, and ¼-cup)). I came across it while browsing through blogs. I tried to "re-find" the exact blog but didn't have any luck. This blogger had it on her kitchen essentials list! I saw it and didn't even read through the rest of her essential items. I had to find it!

I wasn't expecting for the product to be made of hard plastic but it did make me smile because I was reminded of the kind of dishes in my Grandma's cabinet when I was little. Although the reviews on the nesting bowls aren't that great, I have absolutely loved them!!


I haven't had any problems and I use them several times a week. The nesting bowls have definitely saved my cabinet space and sanity, even when the kids empty the dishwasher!! No more excuses that they didn't know where it went!


I ordered mine from Amazon. They were cheaper a few weeks ago. If you are interested, keep an eye out for the price to drop.

Simple and organized...just a little happy!!

Pioneer Woman Wednesday...Recipe #14



This is one of the recipes I made because my rules are:
  1.  Make EVERY recipe in the book (not looking forward to the seafood ones). 
  2.  My hubby, little blessings and myself MUST try at least one bite of each recipe. 
  3.  I will laugh at myself, learn new things and finish a better cook than I started!!
 Rule #1...why did I say that? Not that marmalade is as bad as seafood (in my opinion) but I'm not a marmalade fan. But, ya know, somehow that Pioneer Woman makes everything sound so good! Her, Anne of Green Gables and my friend, Jennell, all have a way with words. They could make you believe that sinking on the Titanic was a great and glorious adventure just by their description!! I don't have that gift and I don't like marmalade.  Let's see how this goes...


Cream sugar and butter. Add eggs. Got it.


Sift flour onto wax paper and add to mixture. ??? Ok, not sure why but I followed directions. (Notice the cool seive...more on this later)


Add buttermilk and baking soda. (Notice the cool green bowl...more on this later)


  Buttermilk added. Combine.


Add orange zest. This is the part I cheated a bit on. The recipe called for 2 oranges and I only "zested" one.


Oops...it's never good when you are through and still have ingredients on the counter. I read through the recipe THREE times before I caught where my mistake was!! Remember up there where I said cream butter and sugar?? It meant sugars...as in granulated sugar AND brown sugar!!

I just added it at the end and it worked out just fine. Whew!! (Notice the measuring cup...more on this later)

At this point, I'm a little excited because I have tasted the batter and it's pretty darn good. I'm thinking maybe the orange zest won't be a strong flavor.


Bake. May I suggest muffin liners. I cooked one batch in my non stick mini muffin pan and most of them STUCK. Second batch was with liners and they came out wonderfully!


So, how did we like them? The marmalade flavor wasn't too strong but I could still taste it and it's just  not my favorite. The huge surprise of the night is that My Hubby LOVED them! He ate all that was salvageable from the first batch. Every time he walked by, he would grab one.  Whoo hoo!! Success...even with the brown sugar mess up!

Pioneer Woman...Recipe # 10

Egg-In-The-Hole



AKA: Egg Basket, Bird's Nest, Pop Eyes...

I was a bit leery to try these. I've never had them before and they don't sound too yummy together. But I do like to take my toast and sop up my eggs...this is the same thing. Right??

**Side note: SURPRISE! SOP is actually in the dictionary. And I thought it was just another okie word like "fixing to" and "hot durn" (said by one of my favorite okies!!).

It's a super duper easy recipe needing 5 simple ingredients. Bread, eggs, butter, salt and pepper.



Cut the middles out of the bread.




Bonus!! You can make cute little pb&j's with the bread you cut out.


Whew! After working so hard cutting the bread out ;), I took an oatmeal crispie break ~~because they are SO good and I am an adult and can have dessert before dinner! Not that you asked for a reason...


The bread goes in the melted butter pan to soak up some goodness. 


Crack the eggs in the hole and let cook for a minute. Flip. 


That is all there is to it!! 


Are Hubby and I the only ones around here who have never had this before?? The friends that I talked to said it was a staple meal at their grandparents house when they were growing up. 

I absolutely *LOVED* it!! The Hubbs and my big little blessing did too! My little little blessing took one bite and no more. He couldn't get past the bread and egg being cooked together and, in his world, that just ain't suppose to be done. 

Well, my little, you'll be seeing Egg-In-The-Hole more now. Hopefully, you'll learn to like them!

Pioneer Woman...Recipe #59

Oh so good...

Oatmeal Crispies...




Cream together shortening, sugar and brown sugar. Whisk eggs and vanilla.


Add egg mixture and flour mixture.



Add oats.




You can roll and freeze these so you can always have some on hand. I chilled mine about an hour before I baked them.



I should have either rolled the dough smaller or cut them smaller. They were HUGE when they were done baking. But, that's ok with me because 1 (no matter the size) is 1 serving size!! ;)


I also only baked one roll. The other one is in my freezer waiting...


I *LOVED* them!! My big little blessing doesn't like oatmeal so she wasn't a fan. My little little loved them! My Hubby still hasn't tried one. He'd better hurry or they may all disappear!!
